|Who needs a backyard when you have a rooftop like this?|
New York-style cookouts might not be quite the same as those of our backyard-boasting neighbors, but if there’s an outdoor soiree somewhere in the city, we are there. (We tend to gravitate toward early evening roof parties with fab sunsets or casual dinners on patios overlooking the water.) Since we still have a few weeks left to barbecue before summer’s end, now is the time to get out and start grilling, smoking or picnicking with a brew in hand.
Speaking of cooking out –– I have a delectable recipe from Unibroue (Un-i-brew) and Flex Mussels to share. You probably know already, but I have an affinity for mussels, so when I discovered a version using ingredients such as bacon, soft pretzels, and Blanche de Chambly, my appetite went into overdrive.
New York City’s Flex Mussels offers some of the most succulent varieties in town. I’ll thank Flex right now for providing this wonderful recipe, which uses beer as the cooking liquid. The Unibroue Blanche de Chambly adds a rich, unusual flavor, and well, the pretzels (hey, I am a PA girl after all), are perfect for dipping into the broth!
Flex Mussels a la Blanche de Chambly
Prep: 15 min | Cooking time: 15 min | Servings: 1
2 tbsp olive oil
2 tbsp caramelized onions
2 tbsp crushed garlic
2 tbsp bacon lardons
1 tbsp sweet butter
1 tbsp Dijon mustard
2 small soft pretzels
1/2 bottle Blanche de Chambly, room temperature
1 lb PEI mussels washed and debearded
3 tbsp coarse chopped parsley
In a pot large enough to hold the mussels, heat the olive oil until it just starts to smoke.
Add garlic, caramelized onions, and bacon lardons, and stir as to not let any of the ingredients stick to the bottom of the pot.
Add mussels and stir to coat with the onions, bacon, and oil.
Next, pour in the beer, add the butter and mustard, stir and cover.
Steam until the mussels have opened wide, remove the lid and stir again, Mix in the parsley.
Discard any mussels that have not opened. Place pretzels on top of the mussels, replace lid and serve.
