Our friends at Haru have the right idea on these chilly winter days. Rather than succumb to frigid weather, the NYC sushi pros have introduced two tasty cocktails. Think warmth. Think beach. Think exotic. Even if you aren’t able to take in the sun and sand in person, warm your insides with a light, flavorful Cucumber Gimlet or a luscious Passion Fruit & Lychee Saketini.
Make these recipes at home, or venture out to one of Haru’s locations and try the libations with their new seasonal menu items–– Chicken Dumplings, Crispy Halibut with Fresh Winter Mix, and the Black Forest Roll.
Haru pan fries the Chicken Dumplings and garnishes with its signature dumpling sauce. The Crispy Halibut with Fresh Winter Mix is a Japanese take on fish and chips. Wait a minute –– aren’t we on the straight and narrow in January? We are, and so Haru skips the chips and serves the fish with a salad of snow peas, carrots, and jicama lightly tossed with lemon dressing.
For sushi fans, the Black Forest Roll is made from smoked salmon, black tobiko (caviar), cucumber, freshwater eel, and torched cream cheese.

3 Lime wedges
4-6 Cilantro leaves
1 pinch Julienned cucumber
1/2 oz Simple syrup
2 oz Purity Vodka (or vodka of choice)
Muddle lime wedges, cilantro and cucumber with simple syrup in a mixing glass. Add vodka and ice. Shake vigorously for 8-10 seconds. Pour into an old fashioned glass and serve.
Passion Fruit & Lychee Saketini
1 1/2 oz Don Q Pasión Rum (or rum of choice)
1/2 oz Nigori Sake
1 oz Lychee puree
1/2 oz Simple syrup
1/2 oz Pineapple juice
Combine all ingredients in a mixing glass. Add ice and shake vigorously for 8-10 seconds. Strain ice and pour into your favorite cocktail glass and serve.
